香酥虾滑 1.虾仁去泥肠洗净 2.加蛋清、玉米淀粉、盐、胡椒、料酒,入料理机打成泥 3.逐次加清水,用两双筷子沿一个方向充分搅拌,每次都等水份吸收再加,直到合适的浓稠度,这个时候下入沸水就是虾滑了 4.取一部分打好的虾滑装进保鲜袋中,用塑料刮板将虾滑推紧实,冷冻成型 5.取下保鲜袋切厚片备用 6.准备一只鸡蛋打散,面包糠,少许面粉,锅内坐油烧热 7.将虾滑依次裹薄薄的面粉,沾满鸡蛋液,再裹满面包糠入油锅炸,中火煎至两面金黄 8.取出沥油即可
